Cormorant Boutique Hotel
What convinced us about Cormorant Boutique Hotel is how precisely it reads its corner of...
Drive north out of La Jolla village on North Torrey Pines Road and the coastline gives way to eucalyptus, sandstone and the low tiled roofs of what looks like a working ranch. Estancia La Jolla sits on ten acres here, built in the hacienda idiom of early California: adobe fireplaces, shaded arcades, courtyards that stay cool when the afternoon sun turns hard. The scale is horizontal rather than vertical, so the property reveals itself slowly, one garden at a time. Guests arrive expecting a beach hotel and find something closer to a country estate, with the ocean and the university both a few minutes away.
Three things decided it for us. The first is the setting: ten acres of mature gardens, chef's garden and working apiary included, which is an unusual amount of ground for a property this close to the coast. The second is Spa Estancia, a destination spa with nine treatment rooms, a couples' bungalow and a meditation garden rather than a token treatment suite. The third is the position between La Jolla and Del Mar, opposite UC San Diego, which puts the Torrey Pines golf course, the state reserve and two very different village centres within reach of one address. The property holds AAA Four Diamond status.
North Torrey Pines Road is a corridor rather than a destination, and that is the point. Across the street sits the UC San Diego campus, with the Salk Institute and the Birch Aquarium a short drive away. North, the road climbs to Torrey Pines State Natural Reserve and to the municipal golf course that hosts professional tournaments on the cliffs; south, it drops into La Jolla village, its cove and its restaurants. Del Mar and its racetrack lie a few minutes further up the coast. A car is useful here and parking sits on site, and the trade-off is a night without traffic noise.

The 210 rooms and suites are spread through low-rise casitas rather than stacked in a tower, and every one of them opens onto a private balcony or patio. Interiors follow the ranch theme without overplaying it: warm woods, wrought iron, textiles in desert colours and enough room to spread out on a long stay. Ground-floor rooms give directly onto lawn and planting, which suits families and anyone travelling with a dog; upper rooms trade that for a longer view over the courtyards and the eucalyptus canopy. Suites add sitting rooms, useful for the academic and corporate stays this address attracts.
Dining is unusually well covered for a property of this size. Greenfinch Restaurant is the evening room, coastal Californian in outlook and the most considered of the five. Mustangs and Burros takes the casual patio trade, with barrel-aged cocktails and a fire pit for when the evening cools. The Trading Post Cafe and Bar handles mornings and quick lunches, The Palma Bar and Grill serves the pool, and The Remedy Lounge covers the late hours. The chef's garden and the apiary feed into the menus, which is rare enough on a hotel property to be worth saying out loud.
Spa Estancia is the reason many guests book. Nine treatment rooms, a couples' bungalow and a meditation garden make it a destination in its own right, and the menu runs from conventional massage to wellness therapies. Outside, the saltwater pool is lined with daybeds and cabanas and kept quiet enough to read beside, with the fitness facilities and the gardens taking care of the rest of the day. Book treatments before arrival at weekends, when the spa draws guests from the city as well as from the hotel.

We were drawn to the view as much as the renovation: a boutique Hilton property...
We were drawn to this address for its position alone: a row of Balinese-inspired suites...
